BUCK is a barrel-aged saison brewed with malted buckwheat and agave nectar. This represents our first experience brewing with buckwheat and our intention was to use a percentage high enough to understand what it brings to the table and then share that expression with our fellow uninitiated and curious patrons.
This beer was brewed in April of 2016 with approximately 30% malted buckwheat from, Colorado Malting Company. It was then aged in neutral red wine puncheons with wild heirloom agave nectar from Mexico and a blend of Brettanomyces. Before packaging we added about 15% young foeder saison to balance the rustic earthiness of the buckwheat and round the oak character developed from the long aging. It was then naturally conditioned in bottles and kegs.
This beer pours with a light haze in a light bronze color with a dense foam that lingers. Aroma a pleasant minerality, low malt breadiness, and a light earthy brett funk. Flavor is a crisp earthiness with bready malt, low acidity and a late fruitiness reminiscent of a wild apple orchard with a hint of barrel and agave character that hints to dried tequila barrels. Carbonation is sparkling which cuts through the round body and dry finish.
