Casa Vieja takes our 4th blend of Saison de la Casa, from December of 2018, which was transferred back to neutral red wine barrels. Our Saison de la Casa blend consists of combining three separate vintages of the same beer. Half of which is mature foeder aged saison, and equal parts fresh stainless fermented saison and 12-24 month old barrel aged saison. This blend was then added back to barrel and aged for another 18-months before being naturally conditioned in bottles and kegs.
